One of the specialties of Ms-B Cake Boutique is the Cheesecake.  It is the one cake which caters for gluten and gluten-free palates. There is no reason why you shouldn’t experience the joys of a really good cheesecake! Listed below is how we can help you with your special requirements, and you can still enjoy a deliciously baked cheesecake from Ms-B Cake Boutique:

The Gluten-Free

When it became clear that I need to follow a gluten-free diet each time I ate cheesecake, I would only eat the top and not touch the crust.  With time I understood that the crust / base can either be gluten or gluten-free, depending on the palate.  From then onwards, I became conscious to check with my customers what they preferred.

The Lactose-Free

Other palates are those which are lactose-free.  Fortunately, at Ms-B Cake Boutique, we are able to use ingredients which accommodate such palates – we use, for example, goats cheese and dairy-free cream.

The Egg-Free

Some of the Cheesecakes I bake are also egg-free, my Non-Baked Cheesecakes would fall into this category.  The egg-free ones enjoyed  most by our customers are our  “Bar One Cheesecakes” and “Peppermint Cheesecakes” (whether they are egg tolerant or not).  We have many other flavours on offer which are also egg-free – make your enquiries at Ms-B Cake Boutique.

Ms-B’s Classic Cheesecake Ingredient Mix

The basic cheesecake ingredients I use, commonly available in the shops are:

Cheese – cream cheese, mascarpone cheese, ricotta, goat cheese, cottage cheese.  Cheeses such as Gouda, Cheddar, Mozzarella and Parmesan I use mainly for savoury cheesecakes.  I mix these cheeses together with cream cheese except for goat cheese.

Chocolate – my preference is 70% dark chocolate, white chocolate, milk chocolate, dark and white chocolate chips.  Tip: I have noticed that chocolate chips do not melt when used whole, but they bring a particular texture to the cheesecakes and other cakes.  Other familiar chocolates in the market which I use are Bar One and Peppermint Crisp.  The cocoa powder which I use for my Chocolate Cheesecakes and Chocolate Cakes is 100% pure cocoa.

Fruit – fresh fruit in season only.

Sugar – there is currently a wide choice of sugars on the market.  For my Cheesecakes, caster sugar is the main ingredient that I use.  Other customers prefer alternative sugar such as xylitol, agave, honey, but there are so many choices available on the market.

Eggs – Baked Cheesecakes mainly require eggs, but with Non-Baked Cheesecakes no eggs are required unless the recipe requires that egg whites are incorporated into the bake.

Nuts – I do not use nuts in my bakes mainly for allergy reasons.  You can always enquire with me first before placing your order.

FREQUENTLY ASKED QUESTIONS

 

Can one freeze a cheesecake?

Yes, cheesecakes can be frozen.  This applies to baked cheesecakes.  Make sure that you remove any decoration if the cheesecake is decorated.  You first need to wrap the cheesecake in cling wrap and then foil.  Put on a label and date it.  The cheesecake will freeze well for up to one month.

Defrosting

Take the cheesecake out of the freezer and put it in the fridge.  Let the cheesecake defrost in the fridge overnight.  Before serving take out the cheesecake from the fridge to be at room temperature and then serve.
